Melting Moments with Strawberry Filling

Baking Melting Moments seems to be my new favourite recipe, I have spent the last two weeks baking Melting Moments non stop. I decided it was time for a change and I really wanted to make a new filling, so I decided to try making a strawberry filling.

The Melting Moments with Strawberry Filling ended up being more popular and tastier than the vanilla version. The combination worked so well. The sweet and fruity taste of the strawberry filling, plus the melting texture of the biscuit made it taste perfect.

I also found that using Lurpak or French Butter makes the Melting Moments taste even better!

There are a few more days of Baketober left, what should I bake next?

Melting Moments with Strawberry Filling recipe

(adapted from Wheatfields Plain Flour package)

250 grams of butter at room temperature

1/2 cup of icing sugar

1 and 1/2 cups of plain flour

1/2 cup of cornflour

Icing

100 grams of butter at room temperature

1 cup of icing sugar

1 teaspoon of strawberry essence

a few drops of pink food colouring

Method

Preheat over to 180 degrees Celsius

Cream butter and sugar until light and fluffy. Add sifted flours and mix well. Place mixture into a piping bag fitted with a Wilton 1M piping tip. Pipe rosettes onto a baking tray lined with baking paper. Bake for 10-12 minutes, until pale golden brown. Cool on wire rack.

For the icing, mix all the ingredients together. Place mixture into a piping bag fitted with a piping tip and pipe the filling on the biscuit. Place another biscuit on top and press gently.

Coconut Ice

Some foods bring back my childhood memories, and sometimes I just feel like reliving those memories. Yesterday I decided that I would make Coconut Ice, a food that I my Mum used to give to me as a treat.

I wanted to find a Coconut Ice recipe that was easy, because I did not feel energetic enough to spend time making it. I ended up finding a recipe of Carnation’s website that involved only 4 ingredients, as opposed to 6 or more ingredients. Luckily for me, I had every ingredient in my pantry.

The Coconut Ice only took less than 10 minutes to prepare and then 2-3 hours refrigeration. I loved the simplicity of the recipe and how great it tasted when it was ready. The Coconut Ice tasted just as I remembered when I was a child, it was pure sweet coconutty goodness.

I think I might make Coconut Ice again soon, it just tastes so good and is so easy to make.  Maybe for a bit of fun, I may add different colours.

Pavlova Ice Cream by Frugii

This weekend my family and I went for a quick trip to Canberra to visit my Brother in law and his partner for my Brother in law’s birthday. I was so excited to revisit Canberra and to finally try all the dessert places that I have been dying to try for a long time. One of the places on my list to visit was Frugii Ice Cream at the Old Bus Depot Markets.

I have been absolutely impressed with John Marshall, owner and maker of Frugii Ice Cream for a long time. I have been following him on Twitter and have read so much about the amazing different types of ice cream flavours that he had created. What I loved the most about Frugii Ice Cream, is that his ice cream is made the proper way, without the use of artificial colours, pastes or bases. I really suggest you read further about his story on his website, it is very inspiring.

When we arrived at the Old Bus Depot Markets, I decided to visit the Frugii Ice Cream stall straight away. When I arrived at the stall, I was greeted by John’s lovely wife Edna. Edna encouraged me to try the ice cream first and suggested I try them all, but I decided not to try them all and try two flavours. I ended up trying the Salted Butter Caramel and the Pavlova Ice Cream. From the first bite, I was so impressed, the ice cream tasted amazing.

In the end, I decided to buy a small tub of the Pavlova Ice Cream, because I did not want to eat too many sweet things before lunch time. The Pavlova Ice Cream was undoubtedly one of the most amazing ice cream flavours that I have tried, the combination of passionfruit ice cream and meringue pieces was a match made in heaven!  In fact, the Pavlova ice cream was so good, that I went back to buy another tub. I really wished that I could have bought some to take home, but unfortunately it would have melted.

One exciting piece of news that I got told is that Frugii intends to open a dessert bar soon. I really hope that some day I can revisit Canberra again so that I can eat at their dessert bar.

Vanilla Melting Moments

I have been participating in Helarious’ Baketober Baking Challenge, I thought this would be a great opportunity for me to learn to bake new things. So far this week, all I have baked is a Cheesecake and today I have baked Vanilla Melting Moments.

I ended up finding the recipe for Vanilla Melting Moments on the packet of my Wheatfields Plain Flour. The recipe caught my eye because firstly I love Melting Moments and secondly the recipe did not seem to require the use of a mixer. The only thing that I was confused about with the recipe, was what is a fluted tube. I still have no idea what a fluted tube is, but I assume it is just like a piping tip.

The Vanilla Melting Moments did not take very long to bake, the recipe was very straight forward. I decided to make vanilla cream filling rather than the passionfruit filling that they had suggested. I was so nervous that it may not work out, that I spent ten or so long minutes anxiously waiting by the oven.

Finally the Vanilla Melting Moments were baked and they looked gorgeous! I ended up cheating by eating one, they tasted so delicious and they just melted in my mouth. Absolute heaven!

I left the biscuits to cool down and started to make the filling. I ended up using a different recipe for the filling that I found online. I piped the filling onto the biscuits and they looked so pretty.

Of course I immediately tried one, the Vanilla Melting Moments tasted so delicious.

Next time I may make a different filing or try to use actual vanilla beans to give it a more real vanilla taste.

Vanilla Melting Moments Recipe

(sourced from Wheatfields Plain Flour package)

Maple Syrup Banana Bread

Today I decided that I would finally take a break from baking brownies and I decide that I would bake some banana bread instead. I started making the banana bread with my usual favourite recipe, and thought I might try making it with maple syrup instead.

I really love baking banana bread, it was one thing that is easy to make and it tastes great. Banana bread is probably one of the only things D will eat, because he does not like sweet things.

The Maple Syrup Banana Bread ended up tasting really nice. The maple syrup did not over power the banana bread, and therefore it did not taste too sweet.  The Maple Syrup Banana Bread got the thumbs up from D! Success!

Maple Syrup Banana Bread recipe 

(adapted from Sophie’s Kitchen Recipe)

2 very ripe bananas

2 -2 and 1/2 tablespoons maple syrup

¾ cup brown sugar

1 egg

1 cup self-raising flour

Preheat oven 160°C fan forced.

Line a loaf pan with baking paper.

In a bowl, mash bananas then add maple syrup. Add sugar and stir in.

Add egg, sifted flour and lightly mix until combined.

Pour into loaf pan and cook for 25-30 minutes or until a skewer is inserted into the middle comes out clean.

Allow to cool in tin for 10 minutes.

Enjoy the Maple Syrup Banana Bread with butter.

Marbled Chocolate Cheesecake Brownies

I think I may have to go to Brownies Addicts Anonymous, because I can not stop baking brownies. I spend my spare time Googling new brownie recipes and I also try to think of new brownies flavours that I can make whilst I sleep. Today I decided I would bake Marbled Chocolate Cheesecake Brownies.

I Googled many Marbled Chocolate Cheesecake Brownies recipes and none of them seemed to work for lazy old me, so I decided to use my existing easy favourite chocolate brownie recipe and add the cheesecake filling. The recipe ended up working out really well.

The Marbled Chocolate Cheesecake Brownies tasted so delicious, I think the addition of the cheesecake filling made the brownies taste even more moist. The cheesecake filling was also not too overwhelming either. The combination was a match made in heaven. My only wish would be to have added more cheesecake filling.

I may have to  find one more brownie recipe and then move onto baking something else. I do not think I will ever buy chocolate brownies ever again, baking them myself is just too easy.

Cheesecake filling recipe

Mix together 250 grams of spreadable Philadelphia cream cheese, 1 egg and 1/4 cup of caster sugar. Add spoonfuls of the filling on the brownies and then use a knife or a skewer to get the marbling effect. Bake for 30 minutes.

 

Double Chocolate Brownies

For the last two weeks, I have been in a chocolate brownie coma. The last flavour of my crazy chocolate brownies baking experiment was Double Chocolate Brownies. The idea is simple, just add white chocolate chips and milk chocolate chips. I was so tempted to add in a third flavour of chocolate chips, but I thought it may be too much.

The Double Chocolate Brownies tasted so good, that I may have eaten way too many.

Reese’s Peanut Butter Chocolate Brownies

A few months ago I went crazy and bought tonnes of Reese’s Peanut Butter Cup chocolate off the Catch of the Day website, I had no idea what I was going to do with it. My friend who is a crazy peanut butter fan suggested that I make Reese’s Peanut Butter Chocolate Brownies.

The idea was simple, once again I used the base chocolate brownie recipe and then added the chopped pieces of Reese’s Peanut Cups. I cut the Reese’s Peanut Cups into quarters and mixed them in. The Reese’s Peanut Butter Chocolate Brownies ended up tasting so good.

Mars Bar Chocolate Brownies

As you may or may not have noticed, I am totally obsessed with the fudgy chocolate brownie recipe that I wrote about a while ago. I have spent the last two weeks baking chocolate brownies and also experimenting with different flavours. One of the flavours that I baked was Mars Bar Chocolate Brownies.

I love baking with Mars Bar Chocolate, it is such a versatile chocolate. I have used Mars Bar Chocolate in cupcakes, cookies and now chocolate brownies. I used the same recipe that I used previously and then added chopped pieces of Mars Bar Chocolate. Such a simple idea and so delicious. These Mars Bar Chocolate Brownies tasted very indulgent and probably my favourite out of three brownies that I made. So much gooey goodness.
